\u00bd cup of plum tomatoes<\/p>\n\n\n\n

1 onion<\/p>\n\n\n\n

2 cloves of garlic<\/p>\n\n\n\n

3 leaves of basil<\/p>\n\n\n\n

1 cup of spinach<\/p>\n\n\n\n

Dairy<\/strong><\/p>\n\n\n\n

Parmigiano-Reggiano<\/p>\n\n\n\n

Liquids & Oils<\/strong><\/p>\n\n\n\n

\u00bc cup of olive oil<\/p>\n\n\n\n

1 \u00bd cups of dry white wine<\/p>\n\n\n\n

Directions<\/strong><\/p>\n\n\n\n

  • Clean your seafood and produce.<\/li>
  • Sear your scallops on medium (350 F) heat for 1-2 minutes on each side or until golden. Remove scallops and begin sauce.<\/li>
  • In a sauce pan combine olive oil, garlic, and onion. Cook until onion is translucent. Combine tomatoes and basil.<\/li>
  • Add white wine to sauce pan and cook until tomatoes have soften then toss in spinach<\/li>
  • Mix in pasta and \u00bd -1 cup of pasta water if sauce becomes too thick<\/li>
  • Plate pasta and add Parmigiano-Reggiano<\/li><\/ul>\n\n\n\n
