Dry Ingredients<\/strong><\/p>\n\n\n\n1 cup of flour<\/p>\n\n\n\n
1\/3 of cinnamon<\/p>\n\n\n\n
2\/3 cups of sugar<\/p>\n\n\n\n
2\/3 cups of shredded coconut<\/p>\n\n\n\n
1 tsp of baking powder<\/p>\n\n\n\n
Wet Ingredients<\/strong><\/p>\n\n\n\n1 tsp of vanilla extract<\/p>\n\n\n\n
2\/3 cup of coconut oil<\/p>\n\n\n\n
1 \u00bd cup of coconut milk<\/p>\n\n\n\n
2 eggs<\/p>\n\n\n\n
1 shot of Malibu Coconut Rum<\/p>\n\n\n\n
Directions:<\/strong><\/p>\n\n\n\n- Preheat the oven at 355 F.<\/li>
- Combine all dry ingredients and mix until smooth.<\/li>
- In a separate bowl combine egg yolks (save your egg whites), coconut milk, vanilla extract, coconut oil and one shot of Malibu.<\/li>
- Combine dry ingredients into wet mixture bowl and let stand as you whip your egg whites.<\/li>
- Once egg whites are fluffy slowly fold them into cake mixture.<\/li>
- Flour and grease your cake pan. I used mini bundt cake molds.<\/li><\/ul>\n\n\n\n
