½ cup of plum tomatoes
1 onion
2 cloves of garlic
3 leaves of basil
1 cup of spinach

Parmigiano-Reggiano

¼ cup of olive oil
1 ½ cups of dry white wine
Directions
- Clean your seafood and produce.
- Sear your scallops on medium (350 F) heat for 1-2 minutes on each side or until golden. Remove scallops and begin sauce.
- In a sauce pan combine olive oil, garlic, and onion. Cook until onion is translucent. Combine tomatoes and basil.
- Add white wine to sauce pan and cook until tomatoes have soften then toss in spinach
- Mix in pasta and ½ -1 cup of pasta water if sauce becomes too thick
- Plate pasta and add Parmigiano-Reggiano
