Ingredients
Seafood
2 pounds of shrimp (1 pound per person)
Produce
1 tbs of garlic paste
1 green pepper
1 red pepper
1 yellow onion
½ scotch bonnet pepper (optional)
Condiments
½ cup of Coconut milk
Baking & Spices
1 tsp of sea salt
1 tsp of garlic powder
1 tsp of onion powder
1 tsp of red pepper flakes
1 tbsp. paprika
1 tsp. dried parsley
2 tbsp. curry powder
Oils & Vinegar
½ cup of coconut oil
Directions
- Clean shrimp and produce.
- Add all dry spices to season shrimp. Save 1 tbsp. of curry for produce.
- In a sauce pan add coconut oil and 1 tbsp. of dried curry. Add produce to pan and cook for 1-2 minutes ensuring vegetables are still crisp before adding shrimp.
- Add shrimp and coconut milk or water (based on preference) to pan and cook for an additional 1-2 minutes.
- Serve with jasmine, long grain or basmati rice. Enjoy!
