Cook Time: 3/4 hours or until soft
Ingredients
2 cups of rice
½ cup of dried kidney beans
1 can of coconut milk (1 cup)
½ cup of coconut oil
2 cups of red bean water
Directions:
- Soak dried red kidney beans for at least 4 hrs.-overnight is best.
- Boil beans in water & salt on low until soft (usually takes 2/3hrs but you need the dark water for the true color so don’t use canned beans)
- Pour red water into a separate bowl or cup and save it for cooking rice
- Wash & measure your Carolina Basmati rice-2 cups of rice (serves 8)
- Add red water, coconut milk, and oil.
- Add 2 tablespoons of salt and cook on medium heat for 20 minutes.
- Optional: I normally add scallion, thyme & scotch bonnet pepper on top. Enjoy! =)
