Ingredients
-1 can of Grace Ackee
-1 package of saltfish
-Fresh seasoning/vegetables: green and yellow bell pepper, 1 tomato, 2 scallions, 1 onion, 1 scotch bonnet pepper, 2 garlic cloves.
-1 package of Johnny Cake mix
-Milk
Directions
- Soak 1 package of saltfish for at least an hr before boiling
- Boil saltfish for 2-3hrs(or until soft)*change the water every 30 minutes to remove salt overload.
- When cooked break fish apart and remove all visible bones. Place to the side and prepare veggies.
- In oil sauté 1 yellow onion, 1/2 red, green & yellow pepper, 1 tomato, 1-2 scallion(s), 1 scotch bonnet pepper, & 2 garlic cloves
- Add cooked saltfish, black pepper, garlic & onion powder(to taste) and let simmer for 5-10mins. *salt optional
- Gently mix in 1 can of washed grace ackee and cook on low for 10-20 mins. *Do not over mix, it’ll turn into mush!*
Fried Dumpling:
1 package of GraceJohnny Cake mix
2/3 cups of milk (follow instructions on the back for perfection 😍).
