Dry Ingredients
-1 cup of basmati rice
-3 tbsp. of Jamaican curry powder
-Onion powder
-Garlic Powder
-Salt/Pepper
Meats
-2 chicken breast cut into cubes
Vegetables
-1/2 red & green pepper
-1 yellow onion & 2 green onions (scallion)
-1 scotch bonnet (I poke holes in mine. Slice for more heat)
-3 cloves of garlic
-lots of thyme lol
-1 scallion
Oils
-1 tbsp of cooking oil
-1 tbsp of sesame oil
Directions
– Cook 1 cup of Basmati rice, following directions from the back of the package.
-While white rice cools clean and cube your chicken breast. Add meat to a bowl.
– Season chicken cubes with dry ingredients (1tbsp. each of onion & garlic powder, salt/pepper, and curry powder).
– In a frying pan add 1 tbsp of cooking oil and 1 tbsp of Jamaican curry powder. Stir and cook for 30 seconds before adding meat.
-Add cubed curry chicken and a thyme branch into the pan. Cook chicken for 6-8 minutes on medium heat until golden.
– In the pan add vegetables to your cooked chicken and stir for 1-2 minutes.
-Designate a section in the middle of the pan and add your rice.
-Stir rice in with vegetables and curry chicken and pat flat with a spatula. Allow the rice to crisp for 2-3 minutes untouched.
-Stir up and continue the flatting process until the rice has crisped up to your liking. Add sesame oil and cut scallions when rice is crispy enough for your liking.
